SCD Jalapeno Sausage Cheese Bread

About a year and a half ago, I was standing in our field minding my own business, when a mare walked in front of me and for no good reason threw out her hind leg and kicked me in the left shoulder.  This sent me flying, not so gracefully, into the air and landing face first on the ground several feet from where I was first standing.  The initial lift off  resulted in a complete fracture of my heel bone and a surgery to screw it back together.  As you all are either on the diet yourself or cooking for someone on the diet, I am sure you can share in the utter dispair I felt when I realized I would be in a chair for 6 weeks non weight bearing.  This actually became 10 weeks.  Many people wanted to cook for us and learned some SCD tips to help us feed our family while I was down.

One of my biggest blessings during this time, however, was my precious sister in law who came to spend the weekend to take care of me and to cook some SCD recipes.  She stayed up till 3 in the morning making soups, stews, muffins and more.  But while she was here she decided to try to make one of her famous recipes SCD friendly for Jacob.  And boy did she hit the nail on the head with this one. The result is so much like the origional.  I hope you enjoy this recipe as much a we do.  There is a little bit to the preparation but I promise it will be worth it.

SCD Jalapeno Sausage Cheese Bread

2 1/2 cups almond flour
1 tsp baking soda
1/2 tsp salt
2 eggs
2 1/2 Tbs melted butter
1/2 cup fresh grated Parmesan Cheese
1 cup fresh grated Colby Jack Cheese
4 oz Farmer's Cheese or 1 cup dripped homemade Yogurt
1/8 - 1/4 cup chopped jalapenos
1/2 cup quartered SCD legal smoked sausage or breakfast sausage(cooked)

Fry sausage in a pan and let cool.  Blot off all grease.  Mix dry ingredients well in a large bowl.  Next, add in wet ingredients and mix well. Mix in sausage and grated cheeses.  Pour into a buttered loaf pan and bake in an oven preheated to 350.  Bake for 30 minutes.  Insert a knife in the center to ensure the loaf is baked completely.  If not place back in oven for 5  min and check again.  Remove and cool.

For the sausage, we have had some smoked made for us at a local meat market.  We provided the meat and they just added green onions and fresh garlic.  If this is not an option there are many SCD recipes for breakfast sausage on line like this one from Eating SCD or this one from No More Crohns.  Also if the sausage is unavailable you could just add some spicy cooked ground meat.

  1. Hello, I just found your blog. We have a lot in common - I'm a Christian, a home school mom to 3, and my son has UC. He's 16. We've been on SCD for 9 months. It's getting discouraging because he still has D and blood daily. But overall, he is better and is feeling better. He takes one med - Lialda. How long did it take for your son to get completely well? We have done SCD with 100% fanaticism as well although sometimes I wonder is it too much fruit, too much almond flour, is it onions, is it eggs.... and on and on and it's hard to pinpoint the trouble food or is it just the disease and just needs more time on the diet? We also have been eating regular beef from the store (no natural flavorings). We should be picking up our grass-fed beef this weekend! Can't wait for that!!! And hope that will also help with healing!

    I love what I've seen on your blog so far. Thank you so much for sharing. The recipe up above sounds wonderful.

    How wonderful to hear from you. And thank you so much for the encouragment on the blog. Oh neat that we have so much in common. His first flare was in Feb of 07 and he was on med mostly and diet not 100%. We got it undercontrol but he felt horrible and was just existing not living. Then he relapsed in Oct of 07 and was hospitalized in Nov. And we restarted the diet the day after Thanksgiving because we got out of the hospital on Thanksgiving day. Great story. But then it was Feb of 08 before I heard him say his stomach didn't hurt for the first time. We started and restarted the diet many times. It took us a while to get the diet right and I kept finding things that I could change. But Erin from Nomorecrohns looked at what we were eating and there were some changes we needed to make and we did. Over night he stopped hurting for the first time.. I ended up following the schedule on Pecan bread because I found it so difficult to find the problem. Are yall keeping a food diary? Some times that can help highlight a problem food you haven't thought about by watching the food item and then the symptoms that occur. It can also be a couple of days before you see the whole symptom. If your suspicious of a food maybe wait like 3 days before eating then try and see what happens to the symptoms. OH you will love the grass fed beef, I always feel like it cooks itself it always turns out so delicious. I pray the Lord leads you to the answer soon and all the symptoms are relieved. I so believe in this diet and feel like it was God's answer to this terrible disease. Please keep in touch I would love to know how things are turning out.

  3. Thanks for writing me back. Erin also offered to have me send in what he's eating and look at it, but I never did. I think we will start the Pecan Bread stages after the holidays. We're going to be traveling for Christmas and be gone for 10 days. We went away over Labor Day to my Mom's (where we're going this time) and she did great cooking for Ben's diet. His stomach never hurts except for the cramping before a BM. That would be twice today. (and saw blood both times) We had to stop eating yogurt for about 3 months and now he can eat small amounts of it. But like you said, it's mind boggling to figure it out. He was on prednisone when we first started the diet, so we jumped in pretty quick with regular SCD foods because he was SO hungry and it was so hard at first - complete diet change!!! We needed the health change, and I don't think I would have had the character to do it if not forced to. How we found out about the diet: I started googling health helps for UC and stumbled across SCD. Then I googled the SCD diet and found all kinds of info. I wrote on the NoMoreCrohns FB page, and another lady saw it and sent me a message. I live in OH and she lives in MD. Her son has Crohns. She was my lifeline. She sent me recipes and started emailing me all kinds of websites and information. We got to meet each other in September! Her son has been in total remission for over a year now. Praise the Lord! Like you said - the diet is God's answer for many people. Her son goes camping too like your son does.

    We've pretty much stayed home and not ventured out much except going to my mom's and she is really trying hard to help out in anyway she can.

    We're learning to do church potlucks and Christmas parties. :) But not easy if we go back to the basics on Pecan Bread. I hate to think of it. :( What did the rest of the family do while he ate that way? I guess just eat normal food. We all eat SCD for most meals except breakfast. I rarely add non-SCD foods. But I don't think we could handle the Pecan Bread stages - haha - especially my hubby. I'll just have to make it work!! With the Lord's help!

    God gave me a parallel about the diet and being saved. SCD looks hard (and it isn't always easy, is it?!) but once you try it out - you like it - love it - because it brings healing and good health! Turning to Jesus and becoming a Christian might look hard (and sometimes it is) but the joy, peace, eternal life - it's all wonderful! "O taste and see that the Lord is good!" I shared that with a few other SCDers. :)

      I just realized my response to your post didn't go through! I'm so sorry. I am not very savvy on the computer. ;D Any way I do hope all went well with the Christmas season. All the traveling and dinners. I know what you mean. It is a tough time to start the diet. But it sounds like you did the right thing just implenenting changes till you could do the intro. What a blessing from the Lord to have an SCD friend close enough to meet with. That had to be such an encouragment for your son as well.

      Well when we did the intro. I just made things for the family but nothing very complicated. Baking things or a Big Sandwich. Also,(I hate to admit it) at times my husbad just picked something up so I could focus on Jacob. But now, I pretty much make most things that the whole family can eat. But if it has gravy I make rice and cauliflour rice. However, when I make Lasagna, Big Sandwiches or Taco Salad, I make two seperate recipes. These are my younger sons favorite meals so I always make an SCD version for me and Jacob and non for my husband and Evan. Also, I save all the almond flour baked goods for Jacob and make other things for the rest of the family. In the process I have stopped making many things we enjoyed before. Like Chicken tetrizzini. I keep thinking there has to be a way to make it SCD and I may figure it out yet!

      I love the message God gave you about SCD. I love it and I love how sweetly He ministers to the hearts of moms dealing with this disease. It is wonderful.

  5. Hey Robin. Oh so glad you like the recipe. Yes she is such a blessing and it meant so much to me that she would come and work so hard to meet Jacob's needs while meeting mine. It was so scary to be out of comission and be the only one who fed him. So it blessed me beyond belief!! Our Christmas was wonderful. Hope yours was beautiful as well. Melanie

  6. This sounds wonderful! My mom would really appreciate having another recipe to try. For sure, it will turn out great as always! ;) She already tried making Jalapeno sausage balls, pizza, salad, kebab, etc, but she hasn’t tried making cheese bread yet.
